A short drive away from San Cassiano village and just a few minutes walk from the Sciovia Armentarola ski lift, Ciasa Salares is a family-run hotel specialising in contemporary food. There are three different restaurants to choose from, but the two-Michelin-starred La Siriola is undoubtedly the hotel’s crowning jewel.
In contrast to traditional alpine restaurants in South Tyrol, the food is modern and refined. Matteo is one of Italy’s youngest Michelin-starred chefs and his menu reflects both his international influences and deep respect for local specialities. Typical dishes include Deer-roast beef, pistachio purée, lemon honey and wasabi rice chips, Cotechino, prawns, yuzu and green tomatoes and Cod, polenta mousse, anchovies, capers and candied tomatoes. Guests can order à la carte, or choose one of La Siriola’s five tasting menus, each named after a different variety of wood – an homage to the beautiful forests surrounding the hotel.
The restaurant's acclaimed ten-course tasting menu, ‘Eglantine’, offers the most complete La Siriola dining experience. Guests are served the first seven courses at the table, before being invited into the kitchen for a snack. From there, diners head to the cheese room for wine and cheese, where a member of the team will compile a cheeseboard based on personal tastes. After cheese, you make your way to the dedicated chocolate room to enjoy a selection of handmade sweets, before finishing the meal at the table with dessert and coffee.
The interior is elegantly styled and comfortable. Although the beautiful wood ceiling hints at traditional alpine décor, the dining room is colourful and bright. The walls are lined with contemporary paintings and glass sculptures, while stylish leather chairs and semi-circle benches surround the tables. Wine lovers will marvel at the long wine list which is expertly navigated by the restaurant's sommelier, who also creates wine pairings for Matteo’s tasting menus.
