A light, crisp tempura batter makes the perfect coating for asparagus. Asparagus tempura can be served as a starter or snack, with a wedge of lemon and/or a dipping sauce on the side.
Method

Prepare the tempura batter

Preheat the deep-fryer to 180°C

Dip the asparagus spears into the batter, then carefully lower into the hot oil in batches

Cook until crisp and golden (this will take approximately 1-2 minutes) then remove using a metal slotted spoon

Drain on a piece of kitchen paper and season lightly with salt before serving.
Uses
Tempura asparagus will go beautifully with a sweet chilli sauce, or served alongside some grilled fish, perhaps. If you want to keep things super seasonal, serve with a wild garlic mayonnaise.
