Our collection of Friulian recipes may look out of place compared to the rest of Italian food, but don't adjust your screens – Friuli Venezia Giulia is one of Italy's most intriguing provinces, home to a culinary scene that borrows from neighbouring Austria and Slovenia as much as the rest of Italy further south.
Though Italian staples like pasta, risotto and pizza are eaten here, they do not define Friulian cuisine. Jota – a sauerkraut and bean stew – is extremely common here, as are fruit gnocchi like these gnocchi di prugne. Dried fruit, nuts, chocolate, citrus peel and cinnamon are common sweet flavours all over Italy, but in Friuli you'll find them wrapped up in a puff pastry presnitz – a strudel-like pastry eaten over Christmas.
